9-Ingredient Cheesy Italian Sausage & Tortellini Soup Recipe

Do you have an Instapot? I do and I love how it can make this gourmet soup recipe ready to serve in no time at all. The Instapot Pressure Cooker is so convenient for making a multi-step recipe.

Don’t have an Instapot? No worries, because you can make this same recipe in a stewpot on the stove or in a crockpot. It will just take slightly longer to boil and savor the flavors.


Cheesy Italian Sausage & Tortellini Soup Recipe


INGREDIENTS:

1 lb Italian sausage

1 package frozen three-cheese tortellini

2 cans diced tomatoes (garlic, basil kind)

1 tub plain cream cheese

32 oz chicken broth

3 cloves of garlic, minced

1 cup Mozzarella cheese

Handful of sliced mushrooms (optional)

Handful of Spinach (optional)


INSTRUCTIONS:

  1. In instapot, put olive oil, garlic cloves, and Italian sausage in and turn on sauté setting to brown.

  2. Add tortellini, mushrooms, and spinach.

  3. Pour tomatoes and broth over the top then add cream cheese and stir the entire pot up.

  4. Turn instapot to manual for 5 minutes.

  5. Once it beeps for finished, release pressure and then open and add cheese.

For crockpot, cook the Italian sausage, olive oil and garlic in a skillet. Place in crockpot and add all other remaining ingredients, except cheese. Cook on low for 2-4 hours. Add cheese and serve.
