Fresh Cucumber & Onion Pasta Salad Recipe

Who’s clinging to these last few weeks of summer with us? We aren’t ready for Fall yet! We’re still spending time at the lake and soaking up every last ray of sunshine this season! Here’s another great lakeside recipe for our Anchor Crew!

This quick and easy fresh summer pasta salad is excellent for large gatherings. It’s easy to mix up the day before and most ingredients you probably already have in your cabinets. Once you have this ready, just toss in the fridge and you have a side dish already prepared when it’s time for dinner. We actually love this one more after it’s had time to marinate! Swiss Cheese Dip Appetizer

Cucumber & Onion Pasta Salad Recipe

2 lbs pasta

3-4 cucumbers (sliced)

1 lg red onion (thinly sliced)

1/2 c. oil

1 1/2 c. sugar

1 t. pepper

1 t. salt

2 t. garlic powder

2 t. accent

2 Tbsp. Parsley Flakes

2 c. vinegar (I use apple cider)

  1. Cook pasta according to package until al dente. Run cold water over to chill.

  2. Add all vegetables to pasta.

  3. Mix the dressing ingredients and pour over pasta and vegetables.

  4. Put in fridge to cool for 4-6 hours before serving.

This makes a BIG batch so you may want to cut in half.
