The days of summer are numbered, but we are still entertaining guests and serving up some of our favorite snacks. On days when we serve up a hearty breakfast, we typically snack our way through the day until it is time to cook up dinner. This tasty dip combines the the crunch of creamy corn with cheeses and a kick of jalapeno. Serve it up with tortilla chips, and it is oh so yummy. I must warn you . . . it is hard to quit. But then again, who wants to be a quitter. :)
It is too good to keep this savory snack all to ourselves, so here is another great lakeside recipe for our Anchor Crew! Pack up the dip in the cooler, throw a bag of tortilla chips in your swim bag, and you have a fabulous boat snack that is sure to please.

Shoepeg Corn Dip Appetizer
15 oz. can white shoepeg corn, drained
1 c. sour cream
1/2 c. mayonnaise
1/4 c. grated parmesan cheese
2 c. cheddar cheese, grated
3 T. onion, chopped
3 T. jalapenos, chopped
Mix all ingredients together in large mixing bowl.
Chill and serve with chips.
It's really that easy!
