Tropical Fresh Fruit Salad Recipe

Are you tired of the same ole side dish when you go to a gathering where you need to take a dish? Why not switch things up with this fun and delicious tropical fresh fruit salad. You can instantly transport your taste buds to the Caribbean islands with this refreshing and healthy recipe featuring fresh fruit, coconut, and cilantro! We love this delightful dish as a snack, as a great lunch compliment to a sandwich, or it is absolutely perfect as a dinner side dish.


This recipe initially came into our family when Kim's mom, Dorothy a.k.a. Momma Anchor, made it for a Polynesian Luau party we were having around the pool. As with all of our family parties, we did it upright with the full-on whole hog barbecue, lots of luau decorations and hired a live band. This tropical fruit salad became an instant hit that celebratory night and has become a frequent dish requested and served at our summer barbecues. Not only is it absolutely delicious, but it has an eye-catching presentation on your buffet table.


Tropical Fresh Fruit Salad


INGREDIENTS:

1 fresh pineapple, chunked

2 mangos, chunked

2 oranges, peeled and separated (we used 6 Cutie size oranges)

3 kiwis, peeled and sliced

1/4 c. lime juice

1 T. sugar

2 T. cilantro, chopped

1 c. grated coconut


INSTRUCTIONS:

  1. Put all fruit into a serving bowl.

  2. Mix lime juice, sugar, and cilantro together and pour over fruit.

  3. Gently stir in coconut, leaving some for topping when finished.

  4. Chill and serve.
